What you will need:

250g plain flour. (Plus extra for kneading.)

2g baking powder or bicarbonate of soda

170g unsalted butter.

220g soft brown sugar.

100g caster sugar

1/2 tsp vanilla extract. (I prefer vanilla paste.)

1 egg

1 egg yolk

150g of cholate chips. Dark, white or milk. You can even have a range.

Pinch of salt

Start of by preheating the oven to 325 degrees F. (165 degrees C). Line the cookie trays with baking paper. ( Top Tip. Line the bottom and sides with a little bit of butter. Then, I line it all with baking paper. )

Next, sift the flour, salt and baking powder or bicarbonate of soda into a mediam bowl and set aside.

In a separate bowl, mix together the butter, brown sugar and caster sugar until everything is evenly combined. You can wait her use a hand mixer or a electric mixer. You can also use a wooden spoon. Beat in the vanilla, egg and egg yolk until light, creamy and fluffy.

After that, gradually add the reserved ingredients until mixed. With a wooden spoon, stir in the cholate chips.

Spread some flour on the surface you will be working on. Your hands will need to be cold beacause if they are warm then if will effect the consistency.Too much will make it dry. If the mixture is a bit sticky, add more flour.

To get the right amount of dough, pick up and price and squeeze it in your hand. The extra will come out.. The parts which are in your hands, mould it into a ball. Flatten it slightly and then place it on the tray. Make sure there is space beacause if not, they will spread out and start touching. 

Place in the preheated oven for 15 to 17 min. The edges should be a slight golden brown.
